Abstract

New foods are popping up in a weekly basis on supermarket shelves. Some of them are accepted with enthusiasm from consumers. Characteristics of these foods could be their appearance, their taste, or a packaging easier to use. The production of foods (new or old) in pearl form could be of interest because this shape resembles to VIP delicatessen (i.e. caviar) or jewels (i.e. pearls) and, therefore, act as an attraction to consumers. Additionally, these pearls can contain liquid foods (i.e. vinegar or virgin olive oil) and can be used as food decorative and/or flavouring agents in food. Therefore, the aim of this study will be the production of new food products in pearl form.
