Abstract

Last year more and more people in Europe and all over the world are turning to healthy eating, herbal remedies, and herbal cosmetics. There is an ever-increasing tendency for modern human to return to the traditional way of life. According to Hippocrates, the aromatic plants combine the flavor of the taste with the therapeutic value and thus expressed the view: "Make your food medicine and your medicine food" Beverages (infusions - decoctions) prepared from Mediterranean aromatic plants and herbs have always held an important place in the pyramid of the Mediterranean diet. On the other hand, it‘s well known that phenolic compounds are constituents of many plants and herbs, and they have attracted a great deal of public and scientific interest because of their health promoting effects as antioxidants. Their significance to the human diet and antimicrobial activity has been recently established. There is very little research work indicating concentration of phenolic compounds in aromatic plants beverages, as well as for their antioxidant capacity and antimicrobial activity. But there are several studies focus on the essential oils produced by them. Several studies are also be concerned with the antioxidant capacity and the total phenolic content of aromatic plant extracts with solvents of different polarity. Studies on lavender beverages are also limited. For all these reasons this project focuses on the study of the antioxidant capacity and the antimicrobial action of lavender beverages prepared with mineral water.
