Abstract

In the first part of the essay are mentioned the bibliographic information concerning the plant of Crocus sativus L., the cultivation of this plant in Greece, the bioactive compounds of the petals of saffron and finally the ecofriendly extraction methods of polyphenols. The second part is the experiment, all the analysis that was done with the extract of the petals of safron such as total polyphenols, DPPH and FRAP. The final part of the essay is dedicated on the production of an innovative product that comes from the extract of the byproducts of the saffron cultivation (petals).
